I left click and drag to highlight it and as soon as I let go of the left click on the mouse the highlighting goes away and I can't copy it...is there a setting I can check or what could be the cause?

Try restarting your computer. Hopefully it'll fix itself.
Otherwise, it may be that your mouse buttons are too sensitive. You can adjust this (sorta) in Control Panel > Mouse. Or try a different mouse.

Some webpages don't allow you to highlight text for that very reason. If it's really holding you back then while your holding the left mouse button down press CTRL-C and then let go of the left mouse button. That should copy the section of text you're looking for. If it's happening all the time I'd probably check your keyboard for keys that are stuck down.

after highlighting, you use right click to pull up the copy menu
a left click would do exactly what happened to you
and some webpages do not allow copying that way so once I highlight then I might have to do Edit Copy or to a ctrl c to bypass the block
