KDE and Gnome are the big players in this space. IMHO, they are more intuitive than Windows, but not as intuitive as Mac. Windows ends up copying a lot of KDE and Gnome features each time that Microsoft has come out with a big update (like Vista and it's multiple desktops and transparent windows - it's been available for years in KDE and Gnome).



Other players are FVWM, TWM/VTWM, MWM, CTWM, OLWM/OLVWM, wm2/wmx, AfterStep, AmiWM, Enlightenment, WindowMaker, SCWM, IceWM, Sawfish, Blackbox, Fluxbox and Metacity.

The biggest GUIs for most *nix-es are KDE, Gnome, XFCE, CDE and TWM. TWM gets lots of play as a "failsafe" GUI.

Of course there's also Aqua or whatever the interface for OSX is called: since OSX is a *nix, it counts as a GUI.



There are countless others, but these are the big players.



Much work is being spent on realizing 3D desktops like Sun's Looking Glass and Compiz Fusion.

On Linux you can get Gnome and KDE. KDE looks a lot like windows.
