I downloaded some PA income tax fill-in forms, filled them out, and saved them. Now, when I open one of them, the filled in data appears for a split second and then disappears. On another one, I don't see any data at all, and on another, some data is visible and some is not. I restarted the computer, and that didn't fix the problem. How do I make the data visible on these forms?

Adobe Reader is junk, and version 7 is woefully out of date, and extremely dangerous to have 'on-board'.

Try Foxit reader.

Default comes with Ask Toolbar, which you may not want.

During installation early phase, uncheck both "Make Ask my..." and "Set Ask.com..." >

then click the "Decline".

Also, it may want to install "eBay" shortcuts, so disable that added install item, near the end of the pre-install process.
