The Windows folder is a System folder and you can't really delete it.Which one do you want to get rid of? Which is which?
One will be named Windows and the other will be named Windows0 or Windows 1.Windows 0 is the old one. Try right click it and delete. I don't think it will delete.
How did you get 2 Windows folders,and how did you manage to 'downgrade from Ultimate to Professional without formatting the drive? Ultimate to Professional isn't an Upgrade. Really it shouldn't have installed to your computer. What you have is a dual boot setup. Do you get a Windows Old or Windows 7 Professional and a Windows 7 Ultimate choice to boot into on the first screen after the initial POST screen?
7 doesn't have a Documents and Settings folder.well my 7 Ultimate doesn't. From the Start button there are Documents and my user name above it. Do you mean its there that you have two Admin folders?
Whatever, strange one indeed. I did it myself, 3 times, with XP Pro. I was attempting to do a repair using the OS disc, and when got the stage of pressing the 'R' key there wasn't that choice. I didn't format the drive and chose to leave the file system as it was. Ended up with 4 Windows folders, Win + Win0+Win1+Win2. Wiped the whole hard drive using GParted and started fresh instal.
Try going into Control Panel, User Accounts, double click the other account you don't require anymore and then choose Delete this account. Do you want to keep the files from the account , No, then click Delete files. Then, next window, click Delete account.
There's that account gone.
